Apple Fennel Salad
A salad that can be quickly whipped up to go beside freshly grilled chicken, beef or seafood. The flavours of fennel and the lemon vinaigrette will blend well with your favourite protein. You could even serve it with grilled haloumi or with some feta cheese.
Apple Fennel Salad
A quick and easy salad for a warm summers day. Light and refreshing and full of nutrients.
Servings: 4 serves
Ingredients
Salad
- 2 fennel bulbs
- 125 g rocket leaves
- 1 cos lettuce
- 1 apple
- ¼ cup pine nuts
Dressing
- ¼ cup lemon juice
- ½ tsp onion powder
- 1½ tsp dijon mustard
- 1 tbsp maple syrup
- ½ tsp salt
- ¼ tsp white pepper
- ¼ cup olive oil
Instructions
Salad
- Thinly slice fennel and apple, by hand or with a mandoline
- Cut up rocket and lettuce
- In a small frypan over medium heat toss the pine nuts until just browned. Then set aside.
Dressing
- Place all ingredients into either a jar with tight lid and shake well, or into a tall jug and use an immersion blender to combine well, or into a food processor and blitz until combined.
Plating
- Put salad and apple onto a plate, drizzle with dressing and sprinkle with pine nuts!
