Thinly slice fennel and apple, by hand or with a mandoline
Cut up rocket and lettuce
In a small frypan over medium heat toss the pine nuts until just browned. Then set aside.
Dressing
Place all ingredients into either a jar with tight lid and shake well, or into a tall jug and use an immersion blender to combine well, or into a food processor and blitz until combined.
Plating
Put salad and apple onto a plate, drizzle with dressing and sprinkle with pine nuts!
