Apple Fennel Salad

A quick and easy salad for a warm summers day. Light and refreshing and full of nutrients.

Ingredients

Salad

  • 2 fennel bulbs
  • 125 g rocket leaves
  • 1 cos lettuce
  • 1 apple
  • ¼ cup pine nuts

Dressing

  • ¼ cup lemon juice
  • ½ tsp onion powder
  • tsp dijon mustard
  • 1 tbsp maple syrup
  • ½ tsp salt
  • ¼ tsp white pepper
  • ¼ cup olive oil

Instructions

Salad

  • Thinly slice fennel and apple, by hand or with a mandoline
  • Cut up rocket and lettuce
  • In a small frypan over medium heat toss the pine nuts until just browned. Then set aside.

Dressing

  • Place all ingredients into either a jar with tight lid and shake well, or into a tall jug and use an immersion blender to combine well, or into a food processor and blitz until combined.

Plating

  • Put salad and apple onto a plate, drizzle with dressing and sprinkle with pine nuts!
