
Apple Muffins
A gluten-free, nut-free and refined-sugar-free muffin that is guilt-free.
Ingredients
- ½ cup coconut flour
- 1 tsp baking powder
- 2 tsp cinnamon
- ½ tsp nutmeg
- ¼ tsp ground cloves
- 1 pinch salt
- 1 cup apple puree
- ¼ cup honey
- 1 tsp vanilla
- 4 eggs
- ½ cup almond milk (or milk of choice)
- 50 g butter (melted)
- 1 cup grated carrot
- ¼ cup sultanas
Instructions
- Preheat oven to 180°C
- Line muffin tin
- Grate carrot
- Combine the coconut flour, spices and salt in a bowel
- In a separate bowl combine the apple puree, vanilla, whisked eggs, honey, milk and melted butter
- Mix the wet ingredients into the dry ingredients. The coconut flour will soak up a lot of the wetness
- Stir through the grated carrot and sultanas
- Pour into mini muffins tins (that are either well greased or use patty liners)
- Bake in the preheated oven for 12 minutes
These muffins are so healthy you can have them at any time of the day. Breakfast muffins, afternoon tea muffins, supper muffins. I like them as a quick and easy breakfast muffin the best. After baking I freeze them individually so I can grab one when I need a quick and easy breakfast on the go.
