Apple Muffins

Ingredients

coconut flour

almond milk (or milk of choice)

butter (melted)

grated carrot

Instructions
Preheat oven to 180°C
Line muffin tin
Grate carrot
Combine the coconut flour, spices and salt in a bowel
In a separate bowl combine the apple puree, vanilla, whisked eggs, honey, milk and melted butter
Mix the wet ingredients into the dry ingredients. The coconut flour will soak up a lot of the wetness
Stir through the grated carrot and sultanas
Pour into mini muffins tins (that are either well greased or use patty liners)
Bake in the preheated oven for 12 minutes
