Zucchini Waffles

Gluten-free brunch, savoury waffles tasty all alone, or served with poached egg and a side of bacon.

Ingredients

  • 500 g zucchini grated
  • 3 eggs
  • ½ cup almond meal
  • 2 tsp dried parsley
  • 2 tsp dried basil
  • 1 tsp dried oregano
  • ½ tsp salt
  • ¾ cup grated parmesan
  • ¼ cup coconut oil melted

Instructions

  • Grate zucchini, then dry off in paper towel or clean tea towel.
  • Combine all the ingredients well.
  • Heat waffle maker
  • Add a large scoop of the mixture to the hot waffle maker and cook, don't forget to flip half-way through. You should be able to make 4 waffles (depending on the size of your waffles).

Notes

These waffles can be frozen or refrigerated and then reheated in the waffle iron when ready to eat!
