
What is better than a 3 pm munchie treat that is healthy and yummy. This recipe for Matcha Truffles is quick and easy and you can store them in the freezer. That way you can have them on hand when the munchies strike!
Matcha Truffles
A healthy guilt-free sweet treat for those 3 pm munchies. Gluten-free, dairy-free and refined sugar-free.

- food processor
Ingredients
- 2-3 cups boiling water
- 1 cup raw cashews
- 40 g coconut butter
- 2 tsp matcha powder
- 4 tbsp maple syrup
- 1 tsp vanilla
- ¾ cup desiccated coconut
- 1 pinch salt
- extra desiccated coconut for rolling
Instructions
- Soak the cashews in the boiled water for 15 minutes
- Strain the cashews and put them into the food processor, blend until they become a smooth paste
- Add int the softened coconut butter, matcha powder, maple syrup, vanilla, and salt, then blend again
- Add in the desiccated coconut and pulse until well combined and the mixture looks like it could be rolled into balls
- Roll the mixture into balls and then roll the balls in the extra desiccated coconut
- Store in an airtight container in the fridge or freezer
